Making pancakes without pancake mix sometimes seems like too much work (when in reality, it really isn’t…but you know how it is)! I have seen recipes for homemade pancake mix before but I didn’t really feel like making it. I didn’t think we’d use it that often and didn’t see the pull.
So one day my dear daughter Audrey had been watching Sid the Science Kid (their voices!!! ugh!) and they were making pancakes in the episode. So naturally when I asked her what she wanted to make for dinner she said “Pancakes.” Then not so naturally she said, “Pancakes is Spanish for ‘waffles'”…ummmm ok! Apparently I need to watch Sid the Science Kid more carefully.
So I agreed to make waffles only to realize that we didn’t have any milk. I did however remember a box of powdered milk on a shelf in our basement pantry area and “pancake mix” came to mind. I quickly found a recipe of homemade pancake mix from a church recipe book and saw I had all of those ingredients and figured I’d give it a try!
I put together this pancake mix (dividing the recipe by 5, mind you, because apparently when you make pancake mix, you MAKE, pancake mix!!!) I was surprised at how simple it was to put together, and then again at how simple it was to mix up the pancake batter. And I have one more surprise for you, it tasted really good!!!
We made both waffles and pancakes with the mix and both turned out great!
I have some more mix that I’ll be putting to use and I will be making a bigger batch next time around. I was so happy to find an alternative to something in a box, yet achieve the convenience of it! So excited about that! I love when I know exactly what ingredients are in my food. It’s the best for my mind and my stomach.
Homemade Pancake Mix

Large (GIGANTIC) Batch {halved batch below}
17 1/2 cups flour
3/4 cups plus 2 tablespoons baking powder
3/4 cups plus 2 tablespoons sugar
2 tablespoons plus 1 teaspoon salt
4 2/3 cup nonfat dry milk
Mix all dry ingredients together VERY well. Use a whisk or sift to really mix everything together. Store in an airtight container, or in large ziplock bags in the freezer (the freezer will ensure it won’t go bad and you can use it right from the freezer)
Pancakes
1 3/4 cups pancake mix
1 egg
1 cup plus 2-4 tablespoons water
2 tablespoon oil
Beat egg slightly. Add all liquid ingredients to the dry pancake mix and mix until just moistened. Batter should still be lumpy. (Don’t over mix, that will give you flat, rubbery pancakes).
Medium Batch (let us do the math for you)
8 3/4 cups flour
1/3 cup plus 2 2/3 tablespoons baking powder
1/3 cup plus 2 2/3 tablespoons sugar
1 tablespoons plus 1/2 teaspoon salt
2 1/3 cups nonfat dry milk
Mix all dry ingredients together VERY well. Use a whisk or sift to really mix everything together. Store in an airtight container, or in large ziplock bags in the freezer (the freezer will ensure it won’t go bad and you can use it right from the freezer).
