Pineapple Pretzel Fluff

IMG_6507 I know it’s not Wednesday, but Clare has another fun recipe to finish off our DinnerForEveryone lunch that we had together! She’ll take it from here! I know that I’d had this fluffy bit of heaven before, but I didn’t really take notice of it until after I had my Celiac diagnosis. Two years ago, at a church picnic, I scooped some of this on my plate, and then went back and piled on seconds. I wasn’t sure what the crunchy, salty, sweet clumps were – I thought they were maybe nuts – so I kept eating. I had it again at a graduation party and found out that the crunchy bits were pretzels. But I still finished the mound of it I had on my plate. Since then, I’ve resisted temptation – and my tummy thanks me – and avoid this fluff at any gatherings where I see it. This year my sister was visiting from out of town when we had the church picnic, so she got to load it on her plate instead. Later in the week, we were both talking about how much we love it, and she commanded me that I make it for the Dinner for Everyone lunch. Okay, it didn’t take much convincing. I got the recipe from my mom’s cousin and easily adapted it to be gluten free. So, gluten free or not, make it, and try not to eat it all in one sitting. IMG_6510 Pineapple Pretzel Fluff By: Vicki C. 1 c. (gluten free) pretzels, crushed 1 stick of butter, melted 1 c. sugar, divided 8 oz. cream cheese, softened 16 oz. cool whip 20 oz. can of crushed pineapple, drained Mix the pretzels, butter, and 1/2 c. sugar in the bottom of a 9×13 pan. Spread it out evenly and bake at 350 degrees for 5-7 minutes. Remove from oven, allow to cool, and break into chunks. In a large bowl, mix together the cream cheese and remaining 1/2 c. sugar. Fold in the cool whip and then the pineapple. Just before serving, fold the pretzel chunks into the “fluff.” Enjoy! –Clare
