Pizza Quesadillas

pizza quesadillasThis little recipe was an accident that I now love! I was scraping the bottom of my fridge to find something for dinner and I found a couple half packages of tortillas and a bunch of different kinds of cheeses, salsa, and a chicken breast. Therefore, we were going to be having some tortillas. The thing is, I had mostly mozzarella cheese…and an idea was born!

I decided to use the mozzarella and Parmesan cheese along with the chicken, then to top it off I put some Italian seasoning and garlic powder on it to give it more of a distinct flavor. I happened to have some spaghetti sauce in the fridge as well. So I threw the tortilla together, cooked it until the cheese was melted, cut it up and served it with the spaghetti sauce as a side to dip it in. YUMMMA (as my 4 year old son would say…don’t ask me where he got it from, because I don’t know). No matter what you say, it was really delicious and easy.

This would be an awesome side dish for a party (or just for fun), a great snack to have on hand, or you can make a bunch of them for a great main dish like we did. It’s so simple, but everyone loved it and it really was a great twist on an already simple, well known dish.

Pizza Quesadillas

enough ingredients listed to make 3 quesadillas

  • 1 large chicken breast, boiled and shredded*
  • 6 flour tortillas
  • 2-3 cups mozzarella cheese
  • shredded Parmesan cheese, to taste
  • 1 1/2 teaspoons Italian seasoning
  • garlic powder, to taste
  • pizza sauce, for dipping

Boil and shred chicken breast. Grate cheese (if you haven’t bought the pre-shredded kind). Take one tortilla, layer some mozzarella cheese, 1/3 cup shredded chicken breast, a little more mozzarella and some Parmesan cheese. Sprinkle on 1/2 teaspoon Italian seasoning and garlic powder. Put another tortilla on top. Place in tortilla press until cheese is melted or on a buttered skillet, flipping once. When cheese is melted and outsides of tortillas are lightly browned cut it up and serve it with pizza sauce to dip it in.

*You could use sausage, Italian Sausage, or pepperoni
