Roasted Vegetables

Roasting vegetables are as simple as one, two, three….plus vegetables. To get some delicious results you need only olive oil, salt, pepper, and 6 cups of vegetables!

Roasted Vegetables

6 cups chopped vegetables (a combination of your choice, this could be carrots, squash, onions, etc)

2 tablespoons olive oil

1/4 teaspoon pepper

1/2 teaspoon salt

combine all ingredients in a large bowl and toss. Place vegetables in a large pan and spread out so they are in one layer. Bake at 400 degrees for 25-30 minutes.
