Simple Breakfast Casserole



Breakfast casserole is a great thing to make the night before. You can assemble if all the night before, put it in the fridge and then put it in the oven the next morning. This would be a great one for Christmas morning. You can put it together Christmas Eve, and then when you are opening presents in the morning you can throw it in the oven and by the time everyone is done you’llĀ have a hot breakfast casserole ready to eat!!!

I’ve shared a breakfast casserole on here with you before. It’s a little more complicated than this one. I have you chopping up potatoes in that recipe. As delicious as that one is, this one is just a little more simple because I use shredded, frozen potatoes so it’s even faster to put together.

My husband LOVES this breakfast casserole. He told me he could eat it every morning…I don’t know if he was trying to hint at something or what, but I suppose I could make it more often and leave it in the fridge for him to eat before he goes to work.

Simple Breakfast Casserole

  • 12 eggs, slightly beaten
  • 1 pound sausage, cooked and drained
  • 6 cups frozen shredded potatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1 tablespoon mustard
  • 1 cup diced onions
  • 1 1/2 cup cheddar cheese, shredded
  • 2 cups Swiss cheese, shredded
  • 1 cup vegetable of your choice (like peas, chopped broccoli, pepper, etc.)

Combine all ingredients and pour into a greased 9×13 pan. Bake at 350 degrees for 35-45 minutes or until the edges are slightly browned and the center is set. Let sit for about 10-20 minutes before you cut into it.

***Can be assembled the night before and placed in the fridge over night to be baked in the morning. Add 10 minutes to cook time if you do this.
