Slow-Cooker Sweet Potato and Lentil Soup

My sister shared this recipe with me a few months ago. I made it and was not only pleased with the taste, but it’s so jam packed with vegetables that it felt so nourishing as well! It’s a nice, warm, comforting meal, and to make it even better you throw everything into a crock pot to make it!

This recipe is from foodnetwork.com! It seemed like a great recipe, so I left it that way! Ok, well I changed only ONE thing. I switched out the yellow lentils for yellow split peas. Only because my husband has this thing with lentils. He tells me that his mom used to use lentils all the time growing up and it got to be too much for him. I don’t know how long “all growing up” really is. To a kid, a week could be “all growing up.” Either way, if he even hears the word lentil, then he automatically doesn’t like the dish. So I changed that up to avoid trying to convince him to try out the soup!

It has sweet potatoes, carrots, celery, leeks, lentils, ginger, onion, curry powder…and a few more delicious ingredients!!! It seriously is just delicious. We had this soup along with sandwiches. It’d be a great side soup for any meal since there are so many veggies in it, but it is great on it’s own too! It’s creamy and has a great comfort food effect on you without having the dish packed with noodles and cheese.

You definitely have to plan ahead for this meal since it takes a good 8 hours to make in the crock pot, but it’s worth it. It takes minimal effort once you throw everything together.
